While numerous studies have been conducted on what constitutes sustainability, the consumer environment is a bit sparse on the facts of the "foodprint" of what we consume. After all, we shop with our eyes, not so much in terms of carbon or water. However, if we are to make changes to our food system, our mental model of the food system must be aligned to the reality of what our choices mean for land use, water use, human livelihoods and emissions.
